High Protein Feta & Tomato Dip Recipe

High Protein Feta & Tomato Dip

Prepared with cottage cheese for extra protein, this whipped feta dip is topped with seared cherry tomatoes and fresh herbs. It’s served with toasted Villaggio® Rustico™ Sourdough for a crowd-pleasing appetizer that’s easy to make.

Ingredients

Feta Dip:

  • 4 slices Villaggio® Rustico™ Sourdough, toasted and halved
  • 1/3 cup (175 mL) cottage cheese
  • 1/3 cup (175 g) feta cheese, crumbled
  • 1/4 tsp (1 mL) Italian seasoning
  • 1/4 tsp (1 mL) chili flakes
  • 1/4 tsp (1 mL) salt and pepper
  • 1/4 cup (60 mL) olive oil

Burst Cherry Tomatoes:

  • 2 tbsp (30 mL) olive oil
  • 1 1/2 cups (375 mL) cherry tomatoes
  • 1 tbsp (15 mL) finely chopped fresh thyme
  • 2 cloves garlic, minced
  • 1/4 tsp (1 mL) salt
  • 1 tbsp (15 mL) balsamic vinegar
  • 2 tbsp (30 mL) fresh chopped basil, for garnishing
  • 2 tbsp (30 mL) fresh chopped parsley, for garnishing

Directions

Feta Dip:

  1. In a food processor or blender, mix cottage cheese, feta, olive oil, Italian seasoning, chili flakes, salt and pepper until smooth, whipped and creamy. Spoon into a shallow serving dish.

Burst Cherry Tomatoes:

  1. Heat olive oil in a skillet set over medium heat. Add cherry tomatoes, thyme, garlic and salt. Cook, stirring occasionally, for 5 to 8 minutes or until cherry tomatoes start to soften and split. Add balsamic vinegar and toss to combine.
  2. Spoon tomato mixture over feta dip. Garnish with basil and parsley. Serve with toasted Villaggio® Rustico™ Sourdough.

Tip: Alternatively, spread dip on toasted Villaggio® Rustico™ Sourdough, then top with burst tomatoes for a tasty appetizer.
