Breakfast Sammie

Ingredients

  • 4 Slices Of Villaggio® Classico Italian Style Thick Slice White Bread
  • 4 Eggs, Softly Scrambled
  • 1 tbsp (30g) Butter
  • 1 Avocado, peeled, pitted and sliced
  • 8 – 10 Pancetta
  • 4 thick slices of sharp Cheddar
  • 1 Tomato, thickly sliced
  • 1 cup (250g) Arugula
  • 4 tbsp (120g) Mayonnaise
  • Salt & Pepper, to taste

Directions

  1. In a pan, over medium-high heat, fry the pancetta till crispy and drain on paper towels to remove excess grease
  2. In a medium bowl, whisk up the 4 Eggs with salt and pepper to taste
  3. Wipe out the frying pan and melt Butter over medium heat
  4. Add the Eggs, swirling around with a spatula till nearly set, smooth over and allow the Eggs to form
  5. Evenly divide and spread Mayonnaise over 4 slices of bread
  6. Top 2 slices with the scrambled eggs, then layer with Pancetta, Cheese, slices of Avocado, Tomato and Arugula
  7. Top with other slices of bread and serve
