Prosciutto Sandwich with Pesto

With peppery arugula, creamy burrata cheese and zesty pesto, these prosciutto sandwiches on Villaggio Ciabatta Buns are a feast of Italian flavours.

Ingredients

  • 4 Villaggio® Rustico™ Ciabatta Buns, split
  • 2 cups (500 mL) loosely packed arugula
  • 2 tsp (10 mL) lemon juice
  • 2 tsp (10 mL) olive oil
  • 1/4 tsp (1 mL) salt
  • 1/4 tsp (1 mL) black pepper
  • 1/2 cup (125 mL) basil pesto
  • 8 oz (250 g) burrata cheese, drained and sliced
  • 8 slices prosciutto

Directions

  1. Preheat broiler.
  2. Open the ciabatta buns and arrange them on a baking sheet. Broil for 1 to 2 minutes or until toasted.
  3. In a small bowl, toss arugula with lemon juice, oil, salt and pepper.
  4. Spread each bun with pesto. Top with dressed arugula, burrata and prosciutto.

Tip: For loaded sandwiches, top also with sliced roasted red pepper and sliced, drained jarred artichoke hearts.
