This sweet and savoury open-face sandwich makes a fresh and light starter for summer entertaining.

  • 1/2 cup (125 mL) goat cheese
  • 1 tsp (5 mL) lemon zest
  • 4 tsp (20 mL) lemon juice
  • 1/2 tsp (2 mL) cracked black pepper
  • 4 slices Villaggio® Original Thick Sliced Italian Style White Bread, toasted
  • 4 slices ripe honeydew melon, halved (1/4-inch/5 mm slices)
  • 1 cup (250 mL) baby arugula
  • 2 tsp (10 mL) honey or balsamic glaze (optional)


Using electric beaters, beat together goat cheese, lemon zest, lemon juice and pepper. Spread evenly over toasted bread.

Top with honeydew slices and arugula. Drizzle with honey or balsamic glaze if desired.

Tip: Garnish the sandwiches with a few chopped toasted walnuts or pine nuts if desired.
