Carmelized Buns with Berries, Lemon Ricotta and Cream

With their triple berry mixture and hints of lemon and creamy ricotta, these decadent breakfast buns are the best way possible to start your day.

Ingredients
  • 4 Villaggio® Artesano™ Brioche Rolls
  • 1/4 cup (60 mL) unsalted butter
  • 1/2 cup (125 mL) brown sugar
  • 1/4 cup (60 mL) whipping cream
  • 1/2 tsp (2.5 mL) vanilla
  • 1 cup (250 mL) whole milk ricotta cheese
  • 3 tbsp (45 mL) icing sugar
  • 1 tsp (5 mL) lemon zest
  • 1/2 tsp (2.5 mL) lemon juice
  • 1/4 cup (60 mL) whipping cream
  • 1 cup (250 mL) blueberries
  • 1 cup (250 mL) raspberries
  • 1 cup (250 mL) strawberries.
  • 1 tsp (5 mL) vanilla
  • 3 tbsp (45 mL) sugar
  • 1 1/2 cup (375 mL) whipped whipping cream
  • Powdered sugar
Directions
  1. In a skillet melt butter with brown sugar and bring to boil until golden brown.
  2. Add in whipping cream and vanilla.
  3. Put the cut sides of Villaggio® Artesano™ Brioche rolls into the caramel mixture.
  4. Brown until toasty.
  5. Caramel mixture will adhear to that down side.
  6. In a bowl, stir the ricotta with the icing sugar, lemon zest and lemon juice.
  7. Whip cream until peaks form.
  8. Fold approximately 1/4 - 1/2 cup whipped cream into ricotta mixture.
  9. Wash berries.
  10. Mix with sugar and vanilla
  11. Arrange bottoms of Villaggio® Artesano™ Brioche rolls
  12. Layer with ricotta, berries and whipped cream
  13. Add top of Villaggio® Artesano™ Brioche rolls
